3 Greens Salad
Salads can be refreshing or they can be a horrible drag. Changing things up and adding new ingredients and methods is the best way to keep things stay fresh and enjoyable!
2 cups chopped romaine lettuce
1 cup arugula
1 cup spinach
1/2 cup shredded carrots
1 scallion, thinly sliced
1/2 cup radishes, sliced
1/2 cup grape tomatoes
2 tbsp classic balsamic vinaigrette ( find a good recipe here by Mad about Food! )
1/2 cup crumbled Feta cheese
1/4 slivered almonds or pumpkin seeds
This 3 greens salad brings together a whole host of ingredients that compliment each other and offer you all the nutrients in a whole new way. Add all the ingredients to a medium bowl and toss gently to combine then enjoy! If you’re looking for a way to add a little more protein, add in some left over shredded chicken or steak strips to give it a little more heft!
