Easy Stir Fry Stuffed Sweet Potatos

We don’t pay much attention to sweet potatoes during the majority of the year but they’re a much bigger benefit to your meal plan than justas a side dish at Thanksgiving!

4 Servings

4 large roasted sweet potatoes.

2 tbsp coconut oil

1 large or 2 small bags stir fry veggies

1/4 cup coconut aminos

1 tsp garlic powder

1 tsp ginger powder

Sea Salt & Black Pepper to taste

2 tbsp sesame seeds

Optional: 1 15 oz can Adzuki Beans, drained & rinsed or shredded left over chicken / ground beef.

Start these easy stir fry stuffed sweet potatoes by prepping the potatoes themselves. While the potatoes are baking, heat the beans in a small pot on the stove and cover to keep warm. Alternatively, heat up your shredded chicken or ground beef. Add some oil to a large pot and when hot, add the stir fry veggies, coconut aminos, and dry seasonings. Cover and simmer for about 12 minutes, stirring every now and then until the veggies are heated through and tender-crisp. Split the sweet potatoes down the middle and divide between the plates before filling with the beans or meat, and topping with the stir fry veggies!
